Samsa recipes change from one family to the other and are transmitted between generations over centuries. All recipes include two components: the brik filo sheet and the filling.
The brik filo sheets are made by cooking batter into an extremely thin sheet on a flat hot surface. This part can only be done by an experienced baker to have the right consistency and thickness.
Our filling is made out of the best almonds and hazelnuts that the Mediterranean offers. Everything is blended to create a crunchy mix that will be wrapped in a triangle-shaped filo sheet. Once wrapped, everything is soaked in a syrup flavored with honey and orange blossom water. We then top it off by sprinkling chopped pistachios on each piece of Samsa.
Samsa is very tasty. In fact, it is so tasty that it is traditionally reserved to friends and family gatherings. If someone gives you Samsa, then they must really like you because no one would give these delicious sweets away when they can have them themselves.
